My boyfriend and I stopped four times on the winding, three-hour drive from Dublin to Ireland’s west coast in County Clare: once for the valley view, once for the Barack Obama Plaza and service station, and twice to gawk at livestock. When we finally reached the 70-acre organic farm just outside of Corofin, though, sightseeing suddenly felt less urgent. By evening, we were back at the farm tending to the fire, playing cards around the dining table, and watching the horses outside.
